This is a classic cooking method that works well with walleye, and nearly any other fish. Visit your local lumber yard and ask for untreated cedar planks. The day prior to cooking the fish, soak the planks in white wine for at least 12 hours.

Cook time: 10 minutes
Ingredients:
- 1 fish fillet
- 4 ounces coarse mustard
- 1 small onion
- 1 cedar plank
- 1 bottle white wine
- 6 tablespoons butter
- Salt and pepper, to taste
Directions:
1. Place the fish fillet on a plank and season with the salt and pepper. Rub the fillet with the coarse ground mustard, not too heavy, to avoid covering the flavor of the fish.
2. Now pour half the melted butter over the fish and place in an oven at 400 degrees for approximately 10 minutes. While the fish is cooking, sauté the onions in butter at medium heat until they brown.
3. When the fish is done, place the onion on the fish. Serve directly on the plank for a great presentation.
