Tasty Walleye Toppers

Mango-Tomato Salsa
2 tsp. honey
2 tbsp. lime juice
1 tbsp. rum
1 lg. ripe tomato, diced
1 lg. mango, peeled and diced
1 sm. cucumber, peeled and diced
3 green onions, minced

Prepare salsa by stirring together honey, lime juice, and rum. Pour over other ingredients evenly and toss together. Allow to sit at room temperature while preparing fish in your favorite fashion.

Homemade Tartar Sauce
1 c. mayonnaise
1/2 c. dill pickles, finely chopped
1/2 c. onion, finely chopped

Mix the mayonnaise, pickles, and onion in a small bowl and set aside.

Cilantro Salsa
1/4 tsp. sugar
2 tbsp. lime juice
1/3 c. cilantro, chopped
1/4 c. (2 oz.) canned green chilies, diced
1/8 tsp. chili oil

In a small bowl, mix the sugar and lime juice until the sugar dissolves. Stir in the cilantro, chilies, and chili oil. Top fillets with salsa. n
